Sicilian Rolls Recipe

Something for which traditional Italian cuisine is world famous is its meat preparations. For example, the delicious Sicilian rolls. This is a very elaborate dish, which although it requires time and attention, can give you an extraordinary culinary experience.

Ingredients for 4 people:

  • 2 artichokes
  • 3 tablespoons of extra virgin olive oil
  • Half a glass of white wine
  • 600 grams of veal leg
  • 1 tablespoon of sesame butter
  • 1 onion
  • 2 tablespoons of flour
  • 50 grams of Serrano ham
  • 1 and a half glasses of vegetable broth
  • Juice of 1 lemon
  • Salt and pepper

Preparation of the rolls in Sicilian style

  1. First, prepare the artichokes: clean them well and remove the leaves that are too hard.
  2. Then, bring water to boil in a pot in which you can add the artichokes and cover them completely.
  3. When the water boils, add the artichokes, lemon juice and a pinch of salt.
  4. Then let everything cook for a maximum of 5 minutes.
  5. Next, remove the artichokes from the water, drain them and set them aside on a dry kitchen towel.
  6. Then cut the artichokes into small pieces and set aside.
  7. While the artichokes rest, chop the ham into small pieces and place in a bowl.
  8. Add the sesame butter and mix both ingredients.
  9. Cut the meat into thin slices, leave them in a bowl.
  10. On a kitchen board put one of the slices, and add the mixture that you have prepared with the ham on top and add two pieces of artichoke.
  11. Salt and pepper everything and roll up the meat slice, making sure that the filling does not come out.
  12. Tie the roll well with a string and flour it. You must do this with each slice.
  13. Meanwhile, chop the onion finely and heat a little oil in a pan.
  14. Pour in the onion and the rolls, leave them until golden brown.
  15. Once everything is golden brown, pour in the wine and let everything simmer.
  16. Add one tablespoon of the vegetable broth at a time, leaving an interval between each tablespoon.
  17. Then let the broth thicken.
  18. Once the Sicilian rolls are well cooked, place them on a platter bathed in the sauce in which they have been prepared.

Accompany your Sicilian rolls with a garnish of vegetables. Try not to add more flour or protein, as it would be very heavy. Serve while hot.

  • Artichokes go very well with a wide variety of ingredients, but you have to be careful when preparing with milk, as it has the property of curdling it.

  • Another way to serve this recipe is by cutting the rolls into thin slices, but you must take care that they do not unroll in the process. Once cut, you can plate accompanying with a garnish of vegetables and decorating with the sauce.
  • The broth is added in intervals to avoid adding excess liquid and making the sauce very watery.
  • In case you prefer not to consume flour, you can replace it with arrowroot starch. This is easily available in health food stores and is an excellent option for those with wheat allergies.
  • Once your rolls are finished, you can bathe them with a little homemade tomato sauce, or if you prefer, with a white sauce. However, this will alter the flavor of the sauce you made your rolls with.
