Oatmeal muffins

Ingredients

  • The juice of ½ lemon.
  • Baking yeast.
  • Vanilla or cinnamon essence.
  • 2 medium eggs (120 g).
  • 2 glasses of vegetable drink (500 ml).
  • 3 cups of ground oats (300 g).
  • 1 cup of rice flour (100 g).
  • 2 cups of whole cane sugar (200 g).
  • 1 cup of coconut or sunflower oil (100 g).

    * If we like the recipe, we can try other flavors such as candied orange, chocolate chips, grated coconut, cocoa, etc.

    Preparation

    • First, we preheat to 200 ºC.
    • We will beat the two eggs, in a mixer or manually. It is very important to beat vigorously so that the muffins are fluffy.
    • We will add the oil, the lemon juice, the vegetable drink and the sugar, and we will continue beating. We will also add the chosen spices or seasonings (vanilla, cinnamon).
    • Next, in a separate bowl, we will mix the oatmeal with the rice flour.
    • We will incorporate, little by little, the flours to the liquid mixture and we will continue beating.
    • Finally we will add the yeast, we will beat one more minute, and we will have the dough ready.
    • At this point, we must put the dough in the fridge for half an hour, which will also help us make the muffins rise higher and remain tender.
    • We will fill two thirds of each mold. We can sprinkle a little sugar on top to make them more crunchy.
    • We take to the oven and bake for 15 or 20 minutes at 180 ºC.
    • We will check that the dough inside is already well cooked before turning off the oven and letting them cool.

    Sugar-free muffins?

    Although in this recipe for oatmeal muffins we have used whole cane sugar, which is much healthier than white, we can also try sweetening them with honey, cane syrup, agave syrup, maple syrup or cereal molasses.

    We also have a natural sweetener which is stevia, but it must be the one that is purified, transparent in color, and with the least possible flavor.

    To start using it we can combine it with the sugar, and increase the amount in the next recipes if we like the flavor. In this way our muffins will be even healthier and lighter.
