Brioche Flower Cake

Preparation

  • First, break up the yeast in the warm milk.
  • Lightly beat the eggs and pour the milk with the yeast.
  • Next, add the sugar, salt and flour (reserve 50 grams).
  • Work until a smooth dough forms, add the remaining flour and butter in cubes (at room temperature).
  • Keep kneading, cover with plastic wrap and let it ferment until double the volume (at least one hour).
  • Separate the dough into 16 more or less equal parts, about 60 grams each, and flatten with a rolling pin.
  • Next, paint the discs with melted butter.
  • Stack in groups of 4 discs, so that you have 4 mountains left.
  • Roll each one separately, as if they were gypsy arms, you will get 4 more rolls.
  • Cut each of them into five pieces, which will give you 20 servings.
  • Turn on the oven and grease a mold.
  • Then, put the doughs in the shape of a flower and let them rise again.
  • Finally, paint with beaten egg and bake for 20 minutes, until well browned.
  • Remove the brioche flower cake from the oven and let it cool before enjoying.

    Ingredients

    • 30 grams of fresh yeast or 1 tablespoon of baking powder
    • 1 cup of milk
    • 1 spoon of sugar

    For the mass

    • 5 cups of flour
    • 1 teaspoon salt
    • ½ cup of sugar
    • 130 grams of butter
    • 2 eggs
    • The zest of half a lemon

    To fill

    • 200 grams of Nutella

    To paint

    • Apple jelly or whatever flavor you prefer

    Preparation

    • First, dissolve the yeast in the warm milk. Then cover and allow 10 minutes to rise (a foam will form).
    • For the dough, add the sifted flour and salt into a bowl , mix with the sugar, lemon zest, eggs and yeast with milk.
    • Beat with electric rods until it forms a cream.
    • Next, work the dough to form an elastic paste, which you will dump on the previously floured countertop to knead it until it does not stick to your fingers.

    • Put another circle of dough and spread the Nutella, do the same until all the dough discs are completed.
    • Then cut the dough by placing a jar lid or something round in the center. From there, cut as if they were “rays of sun”, without reaching the center of the cake. That is why it is called a flower.
    • Turn on the oven.
    • Again, cut the dough back into  16 small triangles. Take one of them from the end and turn right. Do the same with 8 of them. The rest you turn to the left.
    • Bake for 30 minutes, until the dough is cooked and lightly browned.
    • Finally, remove from the oven and allow to cool well before serving. A delight!
