Homemade Mostachón Recipe

The mostachón is a different dessert with a delicious flavor that will please all diners. In fact, the term mustache is currently used interchangeably to refer to various types of sweets or desserts.

According to Wikipedia , the mostachón is typical of the Sevillian city of Utrera. In addition, its traditional recipe is presented in the form of a round and crushed cake, whose main ingredients are flour, honey, eggs, sugar and cinnamon. Do you want to do it at home?

Homemade mostachón with cream and strawberries

In this delicious variety of homemade mustache, the protagonists will be strawberries. The latter stand out for providing important phytochemicals, such as anthocyanins, quercetin, catechins, ascorbic acid, folic acid, and polyphenols. 

Of course, we must bear in mind that in this case they are combined with ingredients that contain sugars and fats, which, although it gives a delicious flavor, forces us to moderate their consumption. So, enjoy this dessert occasionally, in moderate portions. 

With the quantities indicated below, 10 servings are obtained, but we can adapt them to our needs.

Ingredients

  • 7 eggs
  • 2 cups of sugar (400 g)
  • 1 teaspoon of vanilla (5 g)
  • 1 teaspoon of baking powder (5 g)
  • 2 ½ cups of crushed cookies (500 grams)
  • 1 ½ cups of chopped walnut (300 g)
  • ¾ cup of icing sugar (150 g)
  • 1 cup of cream cheese (250 ml)
  • 1 cup of whipping cream (250 ml)
  • 2 ½ cups of strawberries (400 g)

Preparation

  • First, we  preheat the oven to 180 ºC.
  • On the other hand, we leave a baking tin greased with oil or butter ready.
  • While the oven is preheating, we open the eggs and separate the yolks from the whites.
  • Then, we beat these whites together with the baking powder until we obtain a homogeneous mixture with a firm consistency.
  • Once this mixture is ready, we add the vanilla and the two cups of sugar. We stir well until the new ingredients are integrated.
  • Then, we put all this mixture in a blender glass together with the walnut pieces and the cookie pieces.
  • Before beating, we stir the mixture a little  so that the ingredients are properly integrated.
  • Then, we beat them until we get a paste.
  • With this mixture ready, we pour the contents of the glass into the oven mold.
  • We will bake it for about 30 minutes. Check the doneness by slightly opening the oven and inserting a knife into the dough to see if it comes out clean.
  • While the mustache is baking, prepare a mixture with the cream cheese and whipping cream in a bowl.
  • We also add a little icing sugar and stir to get a meringue texture.
  • After the cooking time, we remove the mold and let it cool slightly.
  • Finally, we pour the meringue over the dough and decorate the dessert with the washed strawberries and cut into pieces or slices.

Mostachones de Utrera

As a second option, we present the traditional recipe to prepare typical mostachones from Utrera, a town in the province of Seville, in Spain.

Ingredients

  • 5 eggs
  • 1 cup of sugar (200 grams)
  • 1 cup of flour (120 grams)
  • Lemon zest
  • 1 teaspoon of baking powder (5 g)

Preparation

  • First, we beat the eggs with the sugar and the lemon zest for approximately 12 minutes. It is important that the mixture increases in volume.
  • Next, we incorporate the flour and the yeast in an enveloping way so that the volume of the previous mixture does not decrease.
  • Once ready, we cover a baking tray with aluminum foil and we pour the mixture with a soup spoon, forming rounded piles.
  • Bake for approximately 10 minutes, at a temperature of 180 ºC.
  • Once ready, remove the mustaches from the oven and let them cool.
  • When they are cold, we sprinkle a little icing sugar on top.
  • Another interesting option is to sprinkle cinnamon on top, to achieve other flavor.
  • Finally, the best way to preserve these Utrera mustaches is to stack them well between the greaseproof paper that was used to bake them, and store them in an airtight container.

With these recipes we can surprise our guests. The first recipe is a hearty and delicious dessert in which we mix flavor and texture with the sweetness and slightly acid touch of the strawberries.

On the other hand, the mostachones from Utrera are a common type of sponge cake in that region of Spain, and we can easily prepare them to enjoy together with coffee after a meal.
