Potato Quiche

In honor of the genius of French cuisine, we share with you the recipe  for potato quiche,  a classic of the gastronomy of the city of love, but this time with potatoes, an ingredient that also gives it a quite Spanish touch.

Originally from the Lorraine region in France, it is a short crust cake filled with cheese, Provencal herbs and eggs. Thus, it is not by chance that the best-known variety is the quiche lorraine , which also contains bacon or bacon in its filling.

It is a main dish in itself, so you can serve a good piece for breakfast and even lunch. He defends himself very well and does not need a companion. Although it goes very well with a good fresh salad of lettuce, radishes and a delicious dressing.

Potato quiche

Ingredients:

  • A ½ kilogram package of shortcrust pastry (breeze)
  • 2 medium potatoes cooked and sliced, cut sheets type
  • 1 medium onion (cut into strips)
  • 1 chopped leek or chives
  • 4 fresh eggs
  • 200 ml heavy cream
  • 250 grams of grated Manchego or Gruyère cheese

  • Again, bake for 35 to 40 minutes.
  • Finally, if you want to achieve a gratin,  sprinkle some Gruyère cheese on top. It will be a delicious crunchy topping. Accompany with a rich green salad and a glass of orange juice. This is a good breakfast option.

    Potato-based quiche

    In this recipe we dispense with the shortcrust pastry and instead choose to prepare a potato base, which will give our quiche a softer appearance, similar to the Spanish omelette.

    Ingredients:

    • 3 medium potatoes cooked and sliced
    • 3 fresh eggs
    • 200 grams of cream or milk cream
    • 150 grams of grated Manchego cheese
    • 1 bell pepper or paprika
    • Salt and pepper to taste
    • Chives or chopped leek
    • Onion, chopped into strips
    • Butter
    • 1 tablespoon of olive oil

    preparation:

    • Once the potatoes are peeled and cut, season with spices to taste.
    • First, preheat the oven to 200 ° C. Butter the mold next; place the potatoes covering everything completely.
    • Second, put the potatoes in the oven preheated to 180ºC, until they are soft.
    • Then beat the eggs with the cream or cream and grated cheese.
    • Sauté the onions, the leek and the pepper with the salt and pepper.
    • Finally, place the onion, leek and pepper sauce inside, and cover with the mixture of eggs, cream and cheese.
    • Bake for about 30 to 35 minutes until set. In this recipe you can add bacon or zucchini to your liking.

    Spanish Chorizo ​​and Potato Quiche

    In this version, besides the pastry, bacon Substituting the traditional recipe for quiche lorraine by Spanish chorizo. This way we will obtain a recipe with a lot of local flavor.

    • First, once cleaned, peeled and sliced, season the potatoes with spices to taste.
    • Remember to preheat the oven to 180ºC.
    • Butter the mold and then place the potatoes covering it completely.
    • Then, put the mold with the potatoes in the oven until they are soft. This will take about 12 minutes.
    • Afterwards, you must beat the eggs with the cream or milk cream and grated cheese.
    • Continue by sautéing the onions, the leek, and the Spanish chorizo. Now add salt and pepper to taste.
    • Next, combine the onion and Spanish chorizo ​​sauce with the mixture of eggs, cream and cheese. Cover the base with this filling.
    • Finally, take to the oven for about 30 to 35 minutes until set. You can also sprinkle a little pecorino cheese on top.
