  • 2 large green peppers, 150 grams.
  • A little bit of salt.
  • 2 or 3 large stalks of fresh celery, 150 grams.

First, enough water must be placed in a pot to cover the vegetables, previously washed and cut into small pieces. Afterwards, you have to fry all the chopped vegetables in a little olive oil.

Next, put water to heat and add them when it starts to boil. It is important to keep the heat low with the saucepan covered, until the vegetables are well cooked. Add salt, pepper or cayenne, and ginger to taste

With carrot and zucchini

Ingredients

  • Salt, pepper and 2 onions.
  • 1 zucchini and 2 carrots.
  • 2 cloves of garlic and 1 green pepper.
  • Extra virgin olive oil and 1 teaspoon of rosemary.
  • 5 celery stalks, chopped and  1 cabbage, cut into strips.
  • 3 tablespoons of chopped parsley.
  • 2 1/2 cups of chicken broth.

Elaboration

First, in a pot, bring the chicken broth to a boil. Then, sauté the finely chopped onion, bell pepper and celery, also chopped, in oil. When the liquid boils, add the onion.

Five minutes later, add the cabbage. Wait another 5 minutes and add the cut carrots. After another five minutes add the peppers, the celery cut into pieces and the zucchini.

When 25 minutes of cooking have elapsed, add the chopped parsley, rosemary, salt and pepper to taste. At the end of 30 minutes, lower the heat and let it cool down to room temperature.

Optionally, a drizzle of olive oil can be added when serving.
